Pumpkin Spice Cake with Cream Cheese Icing
1 spice cake mix
1 small box vanilla instant pudding
1 cup canned pumpkin (or mashed fresh)
1/2 cup vegetable oil
1/2 cup water
3 large eggs
1 tsp. ground cinnamon
1/2 tsp. ground ginger

Preheat oven to 350. Spray a 9x13 pan. Blend all ingredients in a large bowl with an electric mixer for 1 minute. Scrape sides and beat another 2 minutes. Bake 32-35 minutes until toothpick inserted comes out clean. Cool for at least 20 minutes before frosting.

Cream Cheese Icing
8 oz. pkg. cream cheese
3 3/4 cups sifted powdered sugar
2 T. milk
1 t. vanilla 

Mix all ingredients. Frost cake. Refrigerate for 20 minutes uncovered!  After 20 minutes, cover cake with saran wrap and return to the refrigerator of freeze. 

By chilling first, it keeps the saran wrap from sticking to the cake! What an easy idea? Did you already know that one?
